Creole Style Flounder

1 lg. green pepper, sliced in thin strips
1 1/2 cup green onions & tops, sliced
2 tbsp. butter
1 can tomatoes, chopped (2 cup)
1 can tomato sauce (8 oz.)
Salt & pepper
1/2 tsp. ground thyme
1 bay leaf
1 1/2 lb. flounder
3 cup cooked rice

  • Cook onions and pepper in butter until soft (not brown).

  • Stir in tomatoes, tomato sauce, salt and pepper, thyme and bay leaf.

  • Simmer 15 minutes. Remove bay leaf. Spoon over flounder.

  • Bake at 375 degrees for 15 minutes or until flounder is flaky.

  • Serve over a bed of rice. Serves 4-6.
