Creole Style Flounder
1 lg. green pepper, sliced in thin strips
1 1/2 cup green onions & tops, sliced
2 tbsp. butter
1 can tomatoes, chopped (2 cup)
1 can tomato sauce (8 oz.)
Salt & pepper
1/2 tsp. ground thyme
1 bay leaf
1 1/2 lb. flounder
3 cup cooked rice

Cook onions and pepper in butter until soft (not brown).

Stir in tomatoes, tomato sauce, salt and pepper, thyme and bay
leaf.

Simmer 15 minutes. Remove bay leaf. Spoon over flounder.

Bake at 375 degrees for 15 minutes or until flounder is flaky.

Serve over a bed of rice. Serves 4-6.
