Trout Boil

  • This is done in a large kettle (steamer - preferably one with filled insert and vents in top).

  • Put in enough water (6 to 8 quarts) so that it comes about 1" in the inner inserted perforated basket.
  • 6 whole sm. potatoes
    6 whole sm. onions
    1 c. salt (yes one cup)

  • Boil water then place these ingredients in kettle with vents open. Boil 18 minutes.

  • Add 10 to 12 steaks (cut cross-wise of whole fish) on top of potatoes and onions.

  • Boil 12 minutes or until fish flakes with a fork. Drain by lifting basket out of boiling water.

  • Serve with drawn butter, lemon juice and parsley, on large platter.

  • Garnish with lemon and parsley.
