Dorado Steaks In Cretan Cranberry Sauce

6 dorado steaks, 1" thick
1/4 cup butter, melted
3 tbsp. lemon juice
1/2 tsp. salt
1/4 tsp. pepper
1 can chicken consomme
1/2 cup whole cranberry sauce
1 tbsp. lemon juice
2 tbsp. butter
2 tbsp. flour

  • Brush steaks on both sides with melted butter. Sprinkle each steak with lemon juice, salt and pepper.

  • Place on greased broiler pan and broil about 10 to 15 minutes until fish flakes.

  • While steaks are broiling, melt butter in a saucepan over low heat and stir in flour.

  • Blend and stir in consomme. Cook until thickened. Add cranberry sauce and lemon juice.

  • Simmer for about 5 minutes. Place steaks on serving dish.

  • Spoon sauce over steaks. Garnish with lemon wedges.
