Fried Panfish Fillets

Several panfish fillets
Salt and pepper
1 cup flour
Shortening or cooking oil
2 eggs, beaten
1 cup milk
1 cup bread crumbs

  • Combine milk and eggs. Dip fillets in mixture of salt, pepper and flour, then into milk and egg mixture.

  • Roll fillets in bread crumbs until completely covered. Heat cooking oil to 375 degrees.

  • Place fillets in cooking oil and brown well on both sides.
