Fried Panfish Fillets
Several panfish fillets
Salt and pepper
1 cup flour
Shortening or cooking oil
2 eggs, beaten
1 cup milk
1 cup bread crumbs

Combine milk and eggs. Dip fillets in mixture of salt, pepper
and flour, then into milk and egg mixture.

Roll fillets in bread crumbs until completely covered. Heat cooking
oil to 375 degrees.

Place fillets in cooking oil and brown well on both sides.
