Marinade For Fresh Fish

1/2 cup soy sauce
2 garlic cloves or garlic salt
4 tbsp. tomato sauce
2 tbsp. lemon juice
1/2 cup chopped parsley
1 tsp. crushed or powdered oregano
1 tsp. ground pepper
1/2 cup orange juice

  • Allow 3 tablespoons of marinade per pound of fish.

  • Marinate fish for several hours at room temperature to enhance its flavor.

  • Salmon, halibut, sea bass, red snapper, swordfish and albacore are especially delicious marinated.
