Marinade For Fresh Fish
1/2 cup soy sauce
2 garlic cloves or garlic salt
4 tbsp. tomato sauce
2 tbsp. lemon juice
1/2 cup chopped parsley
1 tsp. crushed or powdered oregano
1 tsp. ground pepper
1/2 cup orange juice

Allow 3 tablespoons of marinade per pound of fish.

Marinate fish for several hours at room temperature to enhance
its flavor.

Salmon, halibut, sea bass, red snapper, swordfish and albacore
are especially delicious marinated.
